Eggs: facts and recipes

I am just crazy when it comes to eggs. I liked them boiled, fried, poached, oven baked, frittatas, omelettes. And yes, i eat the yolk too. I am not a white-egg-only person. Eggs are considered to be one of the earths healthiest food as it contains almost every essential vitamin and mineral that our  body needs to function.

One of the biggest nutritional myths is that eating eggs raises your cholesterol levels. The dietary cholesterol in eggs has very little to do with the amount of cholesterol circulating in the blood stream. Cholesterol is an essential fat and the amount of cholesterol is very strictly regulated, and if there is too little cholesterol that is assumed by the diet the body produces it itself.  

Here come some of my favorite egg recipes of the moment : 

Stuffed flax seed omelette.


Flax seed omelette stuffed with grilled yellow bell-pepper, brie cheese, sun dried tomatoes and basil.
Stuffed flax seed omelette with baby spinach, tomato and mozzarella.





Ingredients (1 big omelette) : 3 eggs (organic preferably), 2 tbsp flaxseeds, 3 tbsp water. Olive oil or coconut oil for frying.

1. Mix all the ingredients in a bowl using a fork.
2. Heat a pan. Add some olive oil or coconut oil.
3. Add the egg batter.
4. Fry for a few minutes at low-medium heat.
5. Add your favorite fillings: in the first picture I used : grilled yellow bell-pepper, brie cheese, sun dried tomatoes and basil. In the second picture I used 1 tomato, 1 mozzarella and 20g baby spinach.
6. Close the omelette and ENJOY!


Eggs in bell-pepper:
This has become a big favorite and its a ritual now that I eat this when I am with my best friend. 


Ingredients: eggs and bell-pepper. Olive oil or coconut oil for frying.

I like using yellow and red the most. 

1. Heat a pan with some olive or  coconut oil.
2. Slice a bell-pepper side wise.
3. Put the bell-pepper on the pan and fry for a few minutes. 
4. Turn around and fry for an other few minutes. 
5. Add the egg inside. 
6. Place and lid on top of the pan and let it fry till you get the right consistency that you desire for the egg.
7. Enjoy (with peas, toast, avocado or whatever you desire)
