Mondays are my favorite days of the week ! They are the most inspiring days of the week. So I always give my Mondays a great start. A good workout (today it consisted in a 40 minute indoor walk workout) and pizza for dinner. Pizza on a Monday has become a tradition here at home.
Tomorrow I have an exam so I do not have a lot of free time.
So instead of made a pizza I used a store bought XL high protein wrap (with kamut flour).
I topped it with a thick layer of ricotta, a whole mozzarella, loads Parmesan and fava beans. Fava beans are a typical thing that we eat here the first days of November. Once cooked I topped it with argula and pine nut ! Yumm! ¨
