STONE AGE BREAD - STENÅLDERS BRÖD

4 slices of homemade "stoneage" bread ("stenålders bröd") with different toppings: 
  •  fried egg 
  •  mashed avocado with lemon pepper 
  • herbal cream cheese with cucumber 
  • gouda cheese and olives. 

(6 almonds, cucumber and cherry tomatoes on the side)


 The bread I made only contains different kinds of seeds (flax seeds, pumpkin seeds, sunflower seeds,sesame seeds), nuts (almonds and hazelnuts) and eggs. 

Recipe: 


Ingredients: 
100g almonds, 100g hazelnuts, 100g flax seeds, 100g sesame seeds, 100g pumpkin seeds, 100g sunflower seeds, 5 eggs, pinch of salt and 1dl (1/2 cup) olive oil. 

Procedure:
1. Place the almonds and hazelnuts in a food processor.
2.  Pour the chopped nuts in a bowl and add the other ingredients. 
3. Pour inside a bread tin and bake for 60-65 minutes at 175°C. 
4. Let cool and cut into 17-20 slices.

EGG AND GOAT CHEESE SALAD

Salads are among the most boring and most delicious things you can eat. It all depends on what you put inside them.  




This one has :
  • arugula
  • cherry tomatoes
  • goat cheese (a whole 200g of deliciousness!)
  • fried egg
  • olive oil,l apple vinager and lemon pepper.

VEGETARIAN BURGERS

AVOCADO AND EGG QUORN "BURGERS" are one of the most delicious burgers ideas ever!





 I used wholegrain & sunflower seeds buns. Fried the two quorn "schnitzel's" in a bit of olive oil before topping them with mashed avocado and a fried egg (I just love the mashed avocado and egg combo). I had cucumber and cherry tomatoes on the side. This honestly takes a few seconds to make. This used to me my favorite meal two years ago and i made it EVERY Sunday. I used to serve it with a tomato, avocado, sweetcorn, cashew nuts and cottage cheese salad. I will be doing that next time. 







BROCCOLI OMELETTE


Here comes an omelette idea! 
I love omelettes. They are so fast to prepare and delicious to eat. An omelette can be eater for breakfast, lunch and dinner !

 Big flax seed omelette stuffed with (eggs mixed with flax seeds and a few tbsp nut flour) : coconut oil fried broccoli, brie cheese, basil leaves and pumpkin seed.


MINI PALEO PIZZAS


MINI ALMOND FLOUR PIZZAS

with mashed avocado and fried egg on top !


I love cheese on my pizzas. But for these mini pizzas I decided to challenge myself and try something different. So i opted for my two other favorite ingredients:

AVOCADO 
EGGS 



For 3-4 mini pizzas: 

100g almond flour, 1 egg, 1/2 tsp baking powder, 1 tbsp physillium husk and a pinch of salt. 
1. Mix everything in a bowl. 
2. Let it rest 15 minutes
3. Make 3-4 balls. 
4. Flatten each ball with wet hands on a baking tray covered with baking paper. 
5. Bake for 10 minutes at 175 ° C (untill a bit golden)
6. Top with your favourite pizza toppings. I topped this one with mashed avocado (with a bit of lemon, basil leaves and sea salt ) and a fried egg.

If you use cheese, or vegetables that need to be cooked, re-bake for 5 more minutes until the cheese melts or eat with out rebaking if you are using mozzarella and want a "salad pizza".

Omelette salad

Whats the best thing when you crave something fresh, warm and filling is being able to combine all these characteristics in one and only dish. 

And today I solved it with this OMELETTE SALAD. An omelette stuffed with all my favorite salad ingredients and of course : A LOT OF CHEESE. 
I guess it would not be me otherwise. 

Skip the cheese if you are on paleo diet. 




Ingredients (1 big serving)

For the omelette : 3 eggs, 2 tbsp flax seeds, 4 tbsp water or milk, a pinch of salt. Olive oil or coconut oil for frying. 
For the filling : 1 package mozzarella cheese (125 g), 1/3 of a cosmopolitan lettuce, 100 g cherry tomatoes, 1/2 avocado, 10 cashew nuts, olive oil, salt and black pepper . 

Procedure: 
  1. Place some oil in a frying pan and let it heat up.
  2. Whisk the ingredients for the omelette in a bowl, using a fork and pour on the pan.
  3. Cut all the ingredients for the salad into smaller pieces.
  4. When its almost ready (still a little "watery" in the middle) add the sliced mozzarella cheese.
  5. When the cheese starts melting add the "salad ingredients" on half of the omelette and fold.
  6. Serve immediately 
  7. Divore!

Savoury vegetarian pie

Last weekend I had a family reunion and we all had to make something. I decided to contribute making two savory pies. One with a more "adult" taste and the other one a little more "children" friendly. I decided to stick to ingredients that most people like and not to make things too complicated and too advanced.

So this was the result :


  1. PEAS & GOAT CHEESE with an almond flour crust : almond flour crust is my absolute favorite type of crust when it comes to pies.
Peas and goat cheese with an almond flour crust
Ingredients : 
  • For the crust: 3 dl almond flour, 0.5 dl sesame seeds, 3 tbsp flaxseeds, 50g butter and 1 egg.
  • For the filling : 4 eggs, 250g creme fraice, 200g goat cheese, 300g  peas, salt and pepper.
Procedure: 
1. Mix all the ingredients for the crust. Flatten out in a pie tin and bake at 175° for 7 minutes until golden.
2. Mix eggs with the creme fraice by using a fork. Add salt and pepper.
3. Add the peas on top of the crust. Crumble the goat cheese on top and then add the egg-creme fraice mixture on top. 
4. Bake at 175° for 30-40 minutes.
5. Enjoy warm and with big salad.


2. GREEK FLAVORS with a crispy potato crust. The crust is made by thinly sliced potatoes that are baked until crispy in the oven. I was planing on using sweet potatoes but I know that my relatives are not a big fan of sweet potatoes so I used normal ones. 





Ingredients: 
For the crust: 3-4 medium sized potatoes. 
For the filling: 4 eggs, 250g creme fraice, 1/2 dl olives, 200g cherry tomtoes, a small can sweet corn, 200g feta cheese, 1/2 dl fresh basil leaves, salt and pepper. 

Procedure: 
1. Slice the  potatoes very thinly and place on top of a pie tin. Add olive oil, salt and pepper. (as you can see from the picture underneath) 

2. Bake for 10-15 minutes, at 175° C, until the potatoes get a crispy and brown appearance. 

3. Mix egg with creme fraice, add salt and pepper. 
4. Chop the cherry tomatoes and the feta cheese. 
5. Place cherry tomatoes, sweet corn, feta cheese, olives and basil  leaves inside the crust and pour the egg-creme fraice filling on top. 
6. Bake for 30-40 minutes at 175° C.
7. Enjoy warm and with a big salad.

Eggs: facts and recipes

I am just crazy when it comes to eggs. I liked them boiled, fried, poached, oven baked, frittatas, omelettes. And yes, i eat the yolk too. I am not a white-egg-only person. Eggs are considered to be one of the earths healthiest food as it contains almost every essential vitamin and mineral that our  body needs to function.

One of the biggest nutritional myths is that eating eggs raises your cholesterol levels. The dietary cholesterol in eggs has very little to do with the amount of cholesterol circulating in the blood stream. Cholesterol is an essential fat and the amount of cholesterol is very strictly regulated, and if there is too little cholesterol that is assumed by the diet the body produces it itself.  

Here come some of my favorite egg recipes of the moment : 

Stuffed flax seed omelette.


Flax seed omelette stuffed with grilled yellow bell-pepper, brie cheese, sun dried tomatoes and basil.
Stuffed flax seed omelette with baby spinach, tomato and mozzarella.





Ingredients (1 big omelette) : 3 eggs (organic preferably), 2 tbsp flaxseeds, 3 tbsp water. Olive oil or coconut oil for frying.

1. Mix all the ingredients in a bowl using a fork.
2. Heat a pan. Add some olive oil or coconut oil.
3. Add the egg batter.
4. Fry for a few minutes at low-medium heat.
5. Add your favorite fillings: in the first picture I used : grilled yellow bell-pepper, brie cheese, sun dried tomatoes and basil. In the second picture I used 1 tomato, 1 mozzarella and 20g baby spinach.
6. Close the omelette and ENJOY!


Eggs in bell-pepper:
This has become a big favorite and its a ritual now that I eat this when I am with my best friend. 


Ingredients: eggs and bell-pepper. Olive oil or coconut oil for frying.

I like using yellow and red the most. 

1. Heat a pan with some olive or  coconut oil.
2. Slice a bell-pepper side wise.
3. Put the bell-pepper on the pan and fry for a few minutes. 
4. Turn around and fry for an other few minutes. 
5. Add the egg inside. 
6. Place and lid on top of the pan and let it fry till you get the right consistency that you desire for the egg.
7. Enjoy (with peas, toast, avocado or whatever you desire)
