Random pasta

The story behind this pasta is a fun one. This was the pasta my dearest friend Enrico used to make after we came back home clubbing. It was called "Random pasta". He just grabbed what I had at home and started cooking. And at home I always have three things: pasta, tomatoes and some sort of cream cheese.
This is honestly the best pasta ever. Especially if you have a typical Italian cheese called Rabiola.

This pasta has become my mothers favorite pasta since I made it for her 3 years ago. She loves it for three main reasons:

  1. It´s delicious
  2. Needs only a few ingredients  
  3. Its fast to make


Ingredients (1 person): 70-120g Pasta of your choice (I used protein pasta from Carbzone ) , 100g cream cheese of some kind (if you live in Italy use Rabiola), 125g cherry tomatoes or plum tomatoes, some grated cheese (I recommend to use Parmesan or any other kind of mature cheese), olive oil, salt and pepper. 

Procedure: 
1. Put a big pan of water to boil. 
2. Heat a stir fry pan and add some  olive oil. (You can add some garlic too if you like here)
3. Chop the tomatoes and add in the pan.
4. Let it fry for 5-6 minutes. Then add the cream cheese. Spice with salt and black pepper.
5. Once the water boils, add salt and pasta in the pan.
6. Let the pasta cook and add some of the cooking water to the tomato-creamcheese stirfry pan.
7. Once the pasta is cooked pour it in the pan containing the tomato-creamcheese sauce. 
8. Add the grated cheese and serve !
