AVOCADO AND CAULIFLOWER CHOCOLATE MOUSSE

I never thought of the idea of making chocolate mousse with cauliflower until I found myself with rotten avocados and cauliflower at home. So i decided to use as much as I could of the avocados and added some cauliflower instead. And the result was surprisingly good!




This recipe is : dairy, sugar, gluten and nut free recipe. 

And suitable for all kinds of lifestyles (vegan, vegetarian, paleo,lchf, low carb)


Ingredients (4 servings) : 
200g avocado (about 2 avocados), 150g cauliflower, 1 dl + 1 tbsp cacao, 1.5 dl fiber syrap gold from Sukrin , 4 tbsp coconut milk, 1 tsp pure vanilla, 90g dark chocolate (I used stevia sweetened dark chocolate from Nutri-nick). 


Procedure : 
1. Boil the cauliflower till soft. Rinse under cold water until cold. 
2. Melt the dark chocolate (microwave or at very low heat in a pan). 

3. Mix all the ingredients for chocolate mousse in a food processor. 
4. Pour into serving glass. 
5. Refrigerate for at least 3-4 hours. 
6. Enjoy with desired toppings! 


My toppings & decoration : coconut cream (thick part of a can coconut milk kept in the fridge over night), a pinch vanilla, a few drops coconut stevia drops (from @nutrinick_sweden ), raspberries and raw cacao nibs
