I made this mouth watering goat cheese salad using the new launched "salaki" salad cheese from the Lindahls.
It has a creamy texture and an aromatic goat cheese flavour. Its a little to salty for my taste to eat by itself (I know I have many lchf followers). But its perfect it you add some vegetables to it (both hot and cold).
If you like goat cheese, you will not be disappointed !
It really gives this salads and stir-fries a Mediterranean touch :)
I randomly mixed up :
- lettuce of several kinds
- tomatoes
- olives
- cucumber
- avocado
- cashewnuts
I really love the crunch that nuts give to salads and the flavours and texture that avocado and goat cheese give it to. I did not add any salt as the cheese and the olives give enough saltiness. A simple dressing of equal parts: olive oil, balsamic vinegar and lemon juice AND you have got yourself a dinner made in less than 5 minutes :D
I learned how to make this dressing when I was working as an English teacher in Sicily. The family whom welcomed me as a family member, have inspired many of my dishes throughout the years. Plus have taught me how to make this incredibly fresh dressing, that after almost 10 years never fades to disappoint my taste buds.
