Ingredienser:
(3-4 portioner)2 msk kokosolja
1/4 purjolök
2 paprikor (1 röd och en gul)
300g färsk broccoli
300g quorn strimlor
2 själkar citrongräs, enbart den nedre delen
1 burk kokosmjölk
1.5 cm ingefära
1 vitlöksklyfta
Servering:
thai basilikalime
cashewnötter
chili flakes
3-4 portioner ris, risnudlar eller shirataki nudlar (jag använde det sista)
1. Värm kokosoljan i en stekpanna. Riv ingefäran, pressa en vitlöksklyfta, finhacka purjolöken, krossa citrongräsets rot och dela den i tre delar. Tillsätt ingefäran, citrongräs, vitlöken och löken i stekpannan. Stek till löken färg.
2. Tillsätt quorn strimlorna. Strimla grönsakerna och tillsätt i stekpannan.
3. Stek i cirka 5 minuter tills quornen och grönsakerna får färg. Därefter häll i kokosmjölken och låt puttra i 10 minuter.
4. Smaka av. Tillsätt salt och eventuellt mera grön curry pasta. Servera med nudlar (risnudlar eller shirataki nudlar) eller ris, lime, cashewnötter, thai basilika och chili flakes.
This
weekend I've been quite lazy and not at all productive as I tend to be when it
comes to cooking. However, I have had time to try a new product from Quorn.
Namely, their new "steak strips". There is a recipe I have been wanting to try for a long time that has green curry, lemongrass and coconut milk so I took the opportunity, changed a few ingredients and gave it a try.
Ingredients:
(3-4
servings)
2 tbsp
coconut oil
1/4 leek
2 peppers
(one red and one yellow)
300g fresh
broccoli
300g Quorn steak
strips
2 stalks of
lemongrass, only the lower part
1 can
coconut milk
1.5 cm
ginger
1 clove
garlic
Serving:
thai basil
lime
cashew nuts
chili
flakes

servings of rice, rice noodles or shirataki noodles (I used shirataki noodles)
1. Heat the
coconut oil in a frying pan. Grate the ginger, squeeze the garlic clove, finely
chop the leeks, crush the lemongrass root and divide it into three parts. Add
the ginger, lemongrass, garlic and onion in the pan. Fry till the leeks get color.
2. Add the
Quorn steak strips. Shred the vegetables and add to the pan.
3. Fry for
about 5 minutes until the quorn and vegetables. Then pour in the
coconut milk and let simmer for 10 minutes.
4. Season
to taste. Add salt and possibly more green curry paste. Serve with noodles
(rice noodles or shirataki noodles) or rice, lime, cashew nuts, thai basil and
chili flakes.
