Here comes a recipe I created using fitnessguru´s kiwi yogurt protein powder (can be bought here : www.fitnessguru.com ).
I am such a fudgy cake lover so on rainy days fudge cakes are a must ! :)
COCONUT KIWI PROTEIN FUDGECAKE:
(1 big serving - 2 small servings)
- 1 scoop kiwi yogurt protein powder
- 3 tbsp coconut oil (measured solid)
- 4 tbsp quark or Greek yogurt
- 1 egg
- 1/2 dl shredded coconut
- 1 pinch vanilla,
- 1 peeled kiwi
- 2 tbsp shredded coconut
- 2 tsp coconut sugar/sukrin gold
1. Whip all the ingredients (But kiwi, 2 tbsp shredded coconut and coconut sugar) with an electic or manual whisp till smooth.
2. Pour in a single serving cake tin or ovensecure bowl
3. Top with kiwi, 2 tbsp shredded coconut and coconut sugar
4. Bake at 225 ºC for 12-15 minutes (depending on the deepness of your cake tin/bowl and on how fudgy you want the cake to be)
4. Take out and let it cool till room temperature or eat warm!
5. Serve with whipped coconut cream, quark or icecream
Ps: Bake for 20 minutes if you like cakes less fudgy :)
