Those of you that have been following me for some time know that I am CRAZY about pizza: both sweet and savory. I just can not get enough as there are a billion of toppings that can be added and there are different crusts that can me done. My favorite pizza crust is made with almond flour and I will be making is as soon as I manage to get my hands on some almond flour (something that is very sadly hard to find in Italy).
Today it was a very hot day so I decided to make a pizza with raw veggies on top. Like a pizza and a salad at the same time.
For this delicious LOWCARB COCONUT FLOUR & FLAX SEEDS PIZZA I used :
(1 big pizza)
- 1 dl coconut flour
- 1 dl water
- 2 eggs
- 1 tbsp physillium husk
- 1 tsp baking powder
- 1/2 dl ground flax seeds
- 1 pinch of salt
Procedure :
1. Whip the eggs with the water
2. Mix the other ingredients and mix in with the eggs.
3. Wait 10 minutes
4. Flatten out on baking paper with your hands.

5. Bake at 200 degrees C for 10 minutes
6. Add desired toppings.
7. Eat as a "pizza-salad" or bake for 5-10 more minutes.
