Chia pudding

The newest health obsession  of the moment is CHIA SEEDS

Chia seeds are classified as a superfood. These seeds are put in milk to make puddings, in bread, in rice crackers, crackers, in oats, stir fries, jam, cakes, salads. They are high in:

  • Fiber
  • Protein
  • Omega 3 fat
  •  Calcium
  • Manganese
  • Magnesium
  • Phosphorous
  • Zinc
  • Potassium
  • Vitamin B3
  • Antioxidants (ferulic acid, caffeic acid, quercetin)

They are an  excellent egg replacement in baked goods,  as they absorb water and form a gel. 1 egg = 1 tbsp + 3 tbsp water
This gel is due to the the outer shell of the chia seed is made up of a water soluble mucilage, that swells up several times and acquires a gel like consistency.
When we eat chia seeds a gel in the stomach that slows down food absorption  and that make us feel full.
Unlike flax seeds, chia seeds can be absorbed completely by the body.
