Pesto

I absolutely adore pesto, in all it´s forms and sizes. What I love about pesto is that you can have it on most things (pasta, rice, bread, pizza, fish, meat, omelettes) and the fact that you can you can make it in many different ways.  At home we very often make a budget friendly pesto  made with arugula, instead of basil, and walnuts, instead of  pine nuts.

I made the mistake a few weeks ago to buy store bought pesto! and I am never making that mistake again. Pesto only takes a few minutes to make and there is no excuse not to make it ! 

This weekend I made some arugula pesto and served it with some bean spaghetti, some fresh cherry tomatoes, mozzarella tomatoes and loads of pumpkin seeds. 



Here comes the arugula pesto recipe: 

Ingredients (4 servings): 60 g arugula, 100 g Parmesan cheese, 1 dl virgin  olive oil, 1 clove garlik (can  be skipped) and 1 dl pinenuts or walnuts. 

Procedure: Mix all the ingredients in  a food processor until you get a smooth paste. 


If you want a creamier pesto add a few tbsp cream  cheese ! :)
