This is a pasta sauce that my mother invented. "Aglio e Sapori" means "garlic and flavor". Its a tomato based sauce with garlic and herbal flavor. You need a lot of fresh herbs (rosemary, salvia, oregano and basil), garlic,olive oil and crushed tomatoes. Make sure that the herbs are fresh. This makes a HUGE difference to the dish!
You can add onions as well. But you must know that I actually hate onions so all my dishes exclude onions.
My favorite pasta trick is to take the pasta out 2-3 minutes before its ready and to let it cook in the sauce until its ready. This way it absorbs the flavor of the sauce.
I served it with wholegrain pasta and Parmesan cheese on top. But you can of course make it vegan by skipping the cheese or adding some "almond Parmesan cheese" instead (just ground almonds mixed with a bit of nutritional yeast).
Ingredients: garlic, fresh herbs (rosemary, salvia ,oregano and basil), olive oil, crushed tomatoes (in a can), salt and pepper,
Procedure;
1. Heat up a pan with a few tbsp olive oil. Add herbs (make sure that the herbs are fresh) and crushed garlic.
2. Add the crushed tomatoes.
3. Let it sipper for 15 minutes.
4. Meanwhile boil some pasta.
5. Add salt and pepper.
6. Take the pasta out 2-3 minutes before its ready and let it cook for 2-3 minutes with the sauce.
7. Serve
