Summer "Parmegiana"
In Italy we have a dish called "Parmegiana". Its a eggplant gratin with tomato sauce, mozzarella and parmesan cheese. You layer eggplant, tomato sauce like a lasagna. And its one of my absolute favorite meals.
But when its summer, its way too hot to keep the oven on. Especially when its 40 degrees outside!
So last summer, I invented the SUMMER VERSION of this amazing dish. I turned the dish into a salad and used fresh tomato instead of tomato sauce :

Grill eggplant add fresh tomatoes 🍅, mozzarella and basil leaves 🌱 Drizzle olive oil and add some salt and pepper. Serve warm!!
