Semi warm pasta salad! - for broccoli lovers!

Here comes an amazing pasta salad dish for all the broccoli lovers out there ! 


You can use any pasta you like. I used a low carb pasta from the brand carbzone that I find absolutely delicious,especially if you cook it for a few extra minutes (unlike normal pasta, it becomes more "al dente").



Ingredients:

Pasta (any kind and in desired amount), 1 broccoli stem (or half. I love broccoli so I used a whole one), 150g cherry tomatoes, 1/2-1 mozzarella, 3 tbsp sun flower seeds, olive oil, sea salt, black pepper and coconut oil for frying. 

Procedure:

1. Bring a large saucepan of salted water to the boil. Once it boils add the pasta. And let it cook for the time advised on the package.
2. Meanwhile, heat a wok pan with some coconut oil, and add chopped up broccoli florets. 
3. Chop and mozzarella and cherry tomatoes.
4. Once the pasta is ready,pour into the pan with the stir fried broccoli, add cherry tomatoes, mozzarella, sun flower seeds, salt, black pepper and a drizzle of olive oil. 
5. Serve!
