Protein Risotto
PROTEIN RISOTTO WITH PESTO. Risotto is by far a favorite dish here at home. I guess it reminds me of my childhood. And risotto with pesto is probably one of my favorite kinds of risotto. This one really reminds me of the one my mum makes.
I used protein rice from my protein and I was VERY VERY VERY happy with the result !
Ingredients (2-3 portions) : 150g protein rice , 90-100g pesto, 7 dl water, 1/6 of an onion, 1-2 tbsp olive oil and cheese (desired amount), salt and pepper.
Procedure:
1. Chop the onion finely.
2. Inside a pan add olive oil and onion. Let it fry until golden. Add the chopped pumpkin and rice and let it stirfry for 1 minute until it gets some colour.
3. Add salt and pepper.
4. Add the water , 1/2 dl at the time. And stir.
5. After 8-10 minutes the rice will be ready.
6. Add the pesto, grated cheese. Serve with a sallad and/or a sidedish.
