Lunch with Malin (part1)

Finally I met my university class mate and friend Malin. Like always, time flies and we spend a lot of time in the kitchen cooking and talking. 
 


 This time we were at her very cosily furnished apartment in Västerås, I city located one hour away from where I live.
We walked to her apartment and did some grocery shopping on the way there. 

We decided to try out some products from the Insiders Club box from Nu3

 

  • Nu3 coconut sugar: pure coconut blossom sugar.
  • Nu3 quinoa tricolore: a mix of white, black and red quinoa.
  • Rawlicious Kale chips: dried under 40 degrees and produced with organic ingredients. Without wheat and added sugar.
  • CLIFF BAR coconut chocolate: power bar with chocolate coconut and oats.
  • Nu3 Peanut butter: creamy peanut butter made with 100% peanuts. 

QUINOA: 

Quinoa is a "pseudocereal" that is closely related it spinach. It is a great alternative to rice and it has an aromatic and nutty flavour which is think suits perfectly in salads.



 The quinoa salad is made using the Nu3 Quinoa , cherry tomatoes, marche lettuce, halloumi and pumpkin seeds. Dressing was just a bit of olive oil, salt and pepper. 




We decided to make a vegetable stirfry (yellow, and red bell peppers, sugar snaps and zucchini), fry some store bought falafel and serve it with a quinoa salad and a divine tzatziki made with quark from Lindahls
 



We of course made our lunch extra fancy by eating out on the terrace (both the wind and the sun were on our side) and enjoying a few classes of Prosecco.



RAWLICIOUS KALE CHIPS:

They tasted a bit like the seaweed on sushi with an extra crunch. The package said "originally cheesy" but neither Malin or I found them cheesy. We liked the crunch that the cashew nuts gave them but hoped that the pieces would be bigger (or maybe it was my package that was a little too much crumbled).

CLIFF BAR COCONUT CHOCOLATE:

This bar tastes "naughty" and incredibly "unhealthy". Highly addictive :) 
It reminds of a Swedish cookie called "havre flarn". We loved the crunchy consistency of this product. Probably Malins favourite product in this box and a personal favourite from now on forward as it reminds so strongly of her favourite cookie.
